Stuffed Chicken Breasts Wrapped in Bacon

Usually I like to add some chilli in some form or another to my chicken dishes.   This time the only chilli was on the potato wedges.  And that’s not today’s recipe.

The star of the show today was the chicken.  It was salty from the bacon,  while at the same time, creamy and garlicy from the cheese stuffing.   It has to be one of the easiest recipes to make and definitely one I’ll make again.  I almost feel a little guilty posting this because it’s so easy – there are only 6 ingredients – and 2 are salt and pepper!   Which I often forget to even mention in the ingredients.

Next time I might also use some of the cream cheese to make a little sauce to go with it.   But, that’s next time.


2 chicken breasts

4 rashers of bacon

4 heaped tsp cream cheese

1 clove of garlic

Black pepper


How to make Stuffed Chicken Breasts Wrapped in Bacon

1. Put the cream cheese in a small bowl.   Use a garlic crush and add the garlic.     Put a generous grind of black pepper and a pinch of salt.    Mash well with a fork to combine all the ingredients.

2. Make a slit in the side of each chicken breast.   Stuff with the cream cheese mixture.    Wrap with the bacon.   2 rashers per chicken breast.

3. Bake in the oven for 20 minutes.
