225gskinless chicken breastsdiced into small pieces
1teaspoonvinegaror 1 tablespoon shaoxing rice wine and omit the sugar
1teaspoonfive spice powder
1tablespoondark soy sauce
1teaspoonsugar
50gdry roasted peanuts
300gcooked jasmine rice
3-4tablespoonlight soy sauce
1-2tablespoontoasted sesame oil
Pinchground white or black pepper
1spring onionsfinely sliced
Instructions
Heat the oil in a wok. Add the ginger, onion, chilli pepper and peppers and cook for about a minute.
Add the chicken and cook for a minute or two, then add the vinegar followed by the five-spice powder. As the chicken starts to turn white, add the dark soy sauce and sugar.
Add the peanuts and then the rice, mix well and stir-fry for 1 min.
Season with the light soy sauce, sesame oil and pepper to taste. Finally, stir in the spring onion.
