These easy sweetcorn fritters are a great kid-friendly recipe. They are quick and easy to make and perfect for a light evening meal or lunch. Add some hot sauce if you're a spice lover!
Beat the egg, milk and flour together to make a batter. Then add the sweetcorn, spring onion and seasoning.
Heat a little oil in a frying pan. When it is hot, add spoonfuls of the batter. Cook for about 1-2 minutes on each side.
Serve with lemon, salsa, tomato or a chilli sauce.

To make gluten free, replace the plain flour with gram flour or another GF flour.To add more fibre and make little healthier, replace a third of the flour with wholemeal flour.To make them dairy free, use a plant-based milk alternative such as oat milk.Add herbs or spices to the batter if you want too.
