This tinned mackerel tortilla pizza is a great alternative to a traditional pizza, especially when you're craving pizza and want something that's quick and easy to make! It's ideal for an easy lunch or dinner recipe and easy to adapt to suit your tastes.
Heat the tortillas on both sides in a dry frying pan over a low-medium heat so that they crisp up slightly. If they start to puff up, press them down with a spatula.
Cut the mozzarella into slices and squeeze any excess water out by putting it between a couple of pieces of kitchen roll and pressing gently.
Separate the mackerel from the tomato sauce and spread the tomato sauce onto each base.
Top with the mackerel pieces, courgette, tomatoes, red onion and mozzarella slices.
Put under the grill and cook until the cheese is bubbly and everything is hot.
Serve with salad.
