Tinned Mackerel Potato Salad
This easy main meal salad made with tinned mackerel is a really easy meal to put together. All you need to do is boil the potatoes and mix the dressing and then you've got a tasty light dinner or lunch.

Ingredients

new potatoes

tomatoes
I use cherry tomatoes, halved

salad leaves

tinned mackerel in olive oil
½
red onion
sliced
½
teaspoon
mustard
I use English mustard

tablespoon
white wine vinegar
Pinch
salt and black pepper
Instructions
Clean and halve the potatoes and boil them until cooked. It will probably take about 15 minutes.
Separate the tinned mackerel from the olive oil in the tin.
Put the olive oil from the tinned mackerel plus the vinegar, mustard, salt and pepper in a jar and shake. Alternatively put in a small jug and whisk.
Drain the potatoes and rinse them under cold water so they cool a little. It doesn't matter if they are still warm though.
Assemble the salad with the salad leaves, potatoes, tomatoes, onion and mackerel. Pour over the dressing.
