These light and fluffy Ukrainian cheese pancakes, known as syrniki, are slightly sweet and perfect for breakfast with jam and sour cream. They also make a lovely dessert, especially when dusted with icing sugar.
Take spoonfuls of the mixture and drop into flour. Roll over to cover the outside with flour. Flatten slighly. Place on a floured plate or directly in the frying pan.
Fry on each side for about 3-4 minutes until golden brown.
Serve with jam and sour cream
