These harissa chicken quesadillas are a great way to use up leftover roast chicken. They are quick and easy to make and delicious for an easy lunch or simple dinner.
Place a tortilla in a dry frying pan, spread half of it with harissa paste.
On the other half, layer the cheese, chicken, peppers and red onion. I like to put a little cheese on first then all the other ingredients and then more cheese on top as I think the cheese helps the other ingredients to stick in the quesadilla and not fall out when you flip it over.
Fold the other half of the tortilla over the top and cook over a medium heat for about 2 minutes. Then flip over and cook for another 2 minutes.
