This rich tomato based stew made with butter beans and chorizo is perfect for a comforting family meal at home. It's rich with the Spanish flavour of smoked paprika and so easy to make with mainly store cupboard ingredients.
Remove the skins from the chorizo sausages and cut them into slices.
Put the chorizo in a large saucepan and fry over a medium heat until browned. You won't need additional oil as oil is released from the chorizo as it cooks.
Add the garlic, sofrito, smoked paprika and thyme. Stir into the chorizo. If you don't have sofrito. Stir in a chopped onion and cook until softened.
Add the tinned tomatoes and butter beans. Simmer for 15 minutes.
Serve with bread.
