Peanut Mango and Coconut Granola
A toasty homemade granola with tropical flavours of peanut, mango and coconut. Delicious with thick Greek yoghurt.

dessicated coconut

Instructions
Line 2 baking trays with non-stick baking paper.
Mix together the oats, peanuts and dessicated coconut in a large bowl.
Heat the honey and coconut oil in the microwave until the oil has melted. Add the salt and then pour over the dry ingredients. Mix in well.
Divide the mixture between the two baking trays and spread it out.
Bake in the oven at 150C for 30 minutes. Stir after 15 minutes.
Stir in the dried mango at the end.
