Not only smooth and creamy but also healthy, this pina colada nice cream is a deliciously fruity frozen treat that makes a great family friendly dessert or snack! It's vegan and alcohol free but you could add a dash of rum if you wanted!
The day before you plan to make the nice cream, prepare the bananas and pineapple and freeze them. I put them on some non-stick baking paper on a baking tray in a single layer. When they have frozen I transfer them to a bag or airtight container until I need to use them.
If using the Froothie Evolve then put all the ingredients in the blender jug and select the sorbet function. Use the tamper tool to push down any frozen lumps that are not blending. If you are not using the Froothie Evolve you may need to use the pulse function on your blender. You may also need to keep stopping and removing the lid to scrape the contents down the side of the jug.
Check that the nice cream is smooth and there are no lumps. If there are a few lumps of frozen fruit then blend for a little longer.
Transfer the nice cream to a freezer proof container. Use the spatula to scrape out the nice cream that's at the bottom.
Serve immediately or put in the freezer for later.
