Put the butter and sugar in a large mixing bowl and beat together with a wooden spoon.
Beat in both eggs.
Put the flours, bicarbonate of soda, baking powder and cinnamon in another bowl. Stir.
Add the apple sauce and the dry ingredients to the mixing bowl. Fold together.
Line a muffin tin with cases and spoon the mixture in until the cases are about two thirds full.
Bake the muffins in the oven for 15-20 minutes.
Test to see if they are cooked when a skewer comes out clean.
Cool on a wire rack.

Add a little diced apple for more of an apple flavour.To make your own applesauce for this recipe, peel, core and dice 4 apples. Add a dash of water and bring to the boil. Simmer until the apples are soft. It should take 5-10 minutes. If the pan gets dry then add a little more water.
