Remove the leaves from the stalks of rosemary, chop them roughly.
Put the rosemary, roasted garlic and sea salt into a pestle and mortar and pound to a paste.
Put the salmon on a piece of lightly oiled aluminium foil on a baking tray. Make f ew slashes in the flesh of salmon. Spread the garlic and rosemary mixture into the salmon.
Cut the lemon into quarters. Squeeze a quarter over the salmon before it goes in the oven. Save the rest to serve with the cooked salmon.
Bake the salmon in the oven for 15 minutes.
