This spelt and lentil caprese salad uses classic Italian flavours to make a delicious salad that is filling enough to be a main meal. It's also a great summer side dish that's perfect for picnics, buffets and barbecues.
Cook the spelt and lentils according to the pack instructions. I needed to boil the spelt for just over an hour and the lentils for about 25 minutes. Drain and leave to cool.
Mix all the ingredients together. Add extra oil, vinegar or seasoning if necessary.
