If you haven't heard of fasolakia it's a healthy vegan Greek bean recipe that is great as either a main meal or a side dish. Flavoured with garlic, ginger and chilli it is definitely a recipe to wake up your tastebuds!

fresh herbs
parsley or coriander

Instructions
Chop the onion and put it in the saucepan with a little olive oil. Cook for about 5 minutes until soft.
Add all the other ingredients to the pan, reserving some of the herbs to garnish with. Simmer over a low heat for about 45 minutes.
Serve with crusty bread.
