The lemon zest gives these easy homemade kidney bean burgers a delicious citrus flavour! They're perfect for an easy meat-free dinner or lunch and a great way to get your kids to eat some extra veggies!
Drain and rinse the kidney beans. Put them in a bowl and crush using a potato masher or a fork.
Add all the other ingredients and mix well. Form into burgers and put on a plate in the fridge to rest. Leave for 30 minutes or longer.
Heat a little oil in a frying pan and fry the burgers for about 5 minutes on each side.
Serve in your favourite bread rolls with tomato, salad leaves and mayonnaise. Or other choice of accompaniments. To add to the lemony flavour, squeezemore lemon juice over the burger.
