If you're looking for a special savoury recipe for pancake day then how about these marry me prawn pancakes? Traditional UK pancakes, aka crepes, filled with a creamy marry me sauce and juicy prawns. They are a real treat!
100mlstockI used vegetable but you could use chicken stock

15grocket(arugula)
Instructions
Make the pancake batter by whisking all the ingredients together. Ideally let the batter rest for 30 minutes but don't worry if you don't have time.
Spray a frying pan with oil and pour in about ⅕ of the batter. When it has set, turn the pancake over either by tossing it or using a spatula.
You can stack the pancakes on top of each other when they are ready and put in the oven on a low temperature to keep warm.
Make the Marry Me Prawns
Spray the frying pan with a little oil. Add the sundried tomato paste and stir. Then add the parmesan, stock and double cream. Stir well and let it simmer for a couple of minutes.
Add the prawns and continue to cook until they are heated through. Stir in the rocket at the end.
Serve the marry me prawns on the pancakes.
