If you're looking for a special savoury recipe for pancake day then how about these marry me prawn pancakes? Traditional UK pancakes, aka crepes, filled with a creamy marry me sauce and juicy prawns. They are a real treat!

On shrove Tuesday I love to make a savoury pancake dish as our main meal for dinner. And these marry me prawns make the perfect filling for pancakes.
What is marry me sauce?
Marry me sauce is a creamy sauce containing sundried tomatoes or tomato paste, parmesan and cream. It's often serve with chicken and and pasta but it goes deliciously with prawns too.
Ingredient notes for marry me prawn pancakes
To make the pancakes you'll need:
- Flour - Use plain flour
- Eggs
- Milk - I used semi skimmed cows milk but you can use a plant based milk alternative instead if you want.
To make the marry me prawns you'll need:
- Sundried tomato paste - I used sundried tomato paste but you can use sundried tomatoes and just dice them finely. If you use a paste it means you get a smoother sauce.
- Cream - I used double cream for an indulgent flavour but you could use single cream to make it a little lighter or even a non-dairy cream alternative.
- Stock - I used a little vegetable stock.
- Parmesan - Parmesan is traditional but I think you could replace it with a similar very hard cheese such as grana padana or even manchego.
- Prawns - I used cooked prawns so just needed to heat them through at the end. You can use raw prawns but would need to cook them for just slightly longer.

How to make marry me prawn pancakes
These are really easy to make. First just whisk together the pancake ingredients. I always use the 123 method which is 100g of flour, 2 eggs and 300ml of milk. If you have time, let it rest for 30 minutes in the fridge but you don't have to.
Spray a little oil in a large frying pan and add about a fifth of the batter. Fry the pancakes on each side until beginning to turn golden. Put them in a warm oven to keep warm while you make the sauce.
Spray alittle more oil in a pan. You can use the same frying pan or use a different pan. Add the sundried tomato paste. Then the parmesan, stock and double cream. Stir till you get a nice smooth sauce.
Add the prawns. Continue to cook until then are heated through and piping hot. Then serve the sauce on the pancakes.
Can you adapt the recipe?
Yes of course. You can use chicken or butterbeans instead of prawns. Just cook it for a bit longer if you use chicken!
You can also serve the marry me prawns with something else instead of as a pancake filling. They make a great sauce for pasta or rice. Or even a filling for a baked potato.

Storing and reheating the leftovers
Any leftover sauce can be kept in the fridge in an airtight container for up to 24 hours. I usually reheat it in the microwave but you can reheat it in a small saucepan with a dash of water.
Ideally though, just cook the amount that you need as I prefer this sauce when it's fresh. You can also store the pancakes in the fridge for up to three days. I usually roll them up and put them in an airtight container.
You can also make the pancake batter in advance. Store it in the fridge for up to 24 hours and then just cook the pancake when you want them.

Marry Me Prawn Pancakes

For the Pancakes/Crepes
- 100 g plain flour
- 2 eggs
- 300 ml milk I use semi skimmed
For the Marry Me Prawns
- 1 tablespoon sundried tomato paste
- 50 ml double cream
- 100 ml stock I used vegetable but you could use chicken stock
- 20 g parmesan grated
- 150 g prawns
- 15 g rocket (arugula)
Instructions
- Make the pancake batter by whisking all the ingredients together. Ideally let the batter rest for 30 minutes but don't worry if you don't have time.
- Spray a frying pan with oil and pour in about ⅕ of the batter. When it has set, turn the pancake over either by tossing it or using a spatula.
- You can stack the pancakes on top of each other when they are ready and put in the oven on a low temperature to keep warm.
Make the Marry Me Prawns
- Spray the frying pan with a little oil. Add the sundried tomato paste and stir. Then add the parmesan, stock and double cream. Stir well and let it simmer for a couple of minutes.
- Add the prawns and continue to cook until they are heated through. Stir in the rocket at the end.
- Serve the marry me prawns on the pancakes.
