These spicy sweet potato fritters are a brilliant easy recipe for breakfast with eggs, for lunch as a side or even just with a salad as I've served them here. They are packed with spices, garlic and chilli pepper which makes them really tasty and definitely worth making. They're also a great way to get some of your 5-a-day!
Heat the oil in a frying pan. Turn the heat to medium-low. Add spoonfuls of the mixture and fry on each side for about 5 minutes. If the heat is too high the fritters will burn on the outside before they are cooked in the middle. You will need to cook the fritters in two batches or use two frying pans at the same time.
