If you're looking for tasty savoury pancake filling ideas then how about these creamy leek and black pudding filled pancakes. The filling is deliciously creamy and works brilliantly as a main meal for pancake day.
Savoury pancakes go brilliantly with a creamy sauce and this leek and black pudding sauce makes a really tasty option for shrove Tuesday.
I know black pudding is the kind of ingredient people love or hate and if you love black pudding then you will definitely like these. If you don't, just use a different meat such as ham, bacon or chorizo.
Ingredient notes for creamy leek and black pudding pancakes
To make this pancake filling you'll need:
- Onion - I add a finely diced onion and you can add some garlic too if you want.
- leeks - I use the whole leek, the green and the white part. Just make sure you wash them well first to get rid of any grit that collects between the leaves.
- black pudding - The black pudding I use is from The Bury Black Pudding Company which produces award winning black pudding. I actually used a chilli black pudding for this but the chilli flavour was very mild. They also produce a vegan black pudding which would be a great option if you don't want to include meat in this dish.
- Double cream - Double cream is thicker and better for creamy sauces than single cream.
- Stock - I just use a little stock powder to mix up the stock for these but you cans use fresh stock if you have it.
- Seasoning - Be generous with the black pepper and add a little salt too!

How to make creamy black pudding and leek pancakes
The pancakes themselves are very easy to make. I use the 123 method which is just 100g flour, 2 eggs and 300ml of milk. Whisk together and then cook on each side in a frying pan.
Keep the pancakes warm while you make the filling. Or if you are confident, make them at the same time but just use a second frying pan.
Heat the oil and then gently fry the onion and leek until softened. Then add the black pudding and continue to cook.
Stir in the double cream, stock and seasoning. Let the mixture heat through and reduce a little if necessary.
Serve the filling with the pancakes.

Can you adapt the recipe?
Yes of course. The main adaptation would be to replace the black pudding if you are not keen on it. Other ingredients that go well with creamy leeks are bacon, ham and chorizo. You could even use beans such as butter beans. If you do use beans, I would add some extra seasoning though, some mixed dried herbs for example or some fresh herbs. A little thyme goes really well.
If you want to make the sauce thicker then add a little extra stock and then stir in a little cornflour and water to thicken it.

What can you do with the leftovers?
The leftover leek and black pudding mixture can be kept in the fridge in an airtight container for up to 3 days. Reheat it in the microwave or in a saucepan. If you reheat it in a saucepan you will need to add a little extra water to it first.

- 100 g plain flour
- 2 eggs
- 300 ml milk I use semi skimmed

- 1 tablespoon vegetable oil
- 1 onion finely diced
- 270 g leeks thinly sliced
- 100 g black pudding diced
- 100 ml double cream
- 100 ml stock I used vegetable stock
- pinch salt
- pinch black pepper

How to make the pancakes
- Whisk the pancake ingredients together and then spray a frying pan with a little oil. Add a ladle of batter at a time and cook the pancakes for a couple of minutes on each side. Stack them up when ready and put in the oven on a low heat to keep warm.
How to make the creamy leek and black pudding filling
- Heat the oil in the frying pan and cook the onion and leek gently for about 5 minutes. Add the black pudding and continue to cook for another 5 minutes.
- Stir in the cream, stock and seasoning and cook for another few minutes then serve the filling with the pancakes.
