These Creole potato waffles are such a simple idea and so easy to make in your waffle maker! You only need two ingredients! Potatoes and creole spice blend! What are you waiting for?
I have to admit that although I love making sweet waffles for my children, I'm really a savoury girl at heart! I definitely prefer savoury foods and I love anything with spices, at any time of day!
These savoury creole potato waffles make a delicious breakfast or brunch served with eggs as I've done here. Or, without the eggs they are just a really tasty potato side dish. By the way, these are not a traditional Creole dish, I've called these spicy potato waffles Creole potato waffles because of the spice blend I used.
If you don't have a waffle maker, I'll give you an idea for how to adapt the recipe too! Creole flavoured potatoes are just too good not to make in some form or another!
Ingredient notes for Creole potato waffles
To make these Creole potato waffles you just need 2 main ingredients:
- Potatoes - I used Maris Piper potatoes and I didn't even peel them. Once you've grated the potato you'll barely notice any bits of potato peelings and the skins are full of fibre so good to keep. Just give them a good scrub first.
- Creole seasoning - This time I used the Creole spice mix from Bart but you can use any Creole spice blend. You can also experiment with other spice blends. I didn't add any salt as the spice blend already contains some salt and so I feel if anyone wants any extra they can add it at the table.
- Oil - I just brush the waffle iron with a little oil before adding the potato. I used light olive oil but you can use any vegetable oil.
What equipment do you need?
I use an electric waffle maker for these. The one you can see in the pictures is from Prozis and can make two waffles at a time. It also comes with pancake and toasted sandwich plates. You can also get larger waffle makers such as this one on Amazon.
How to make Creole potato waffles

First I wash the potatoes well and then grate them using a food processor. Although you can use a hand held grater!
Then dry the grated potato well in a tea towel and squeeze any excess moisture out. Put the potato in a bowl and stir in a teaspoon of Creole seasoning.
Brush the inside of the waffle maker with a little oil and then switch it on and wait for it to heat up. Put spoonfuls of the mixture inside the waffle maker and cook for about 12 minutes.
What if you don't have a waffle maker?
Well, I find these spicy potato waffles are quite similar in texture to my potato rostis which I cook in the frying pan. So, just season the potato in the same way with the Creole spice blend and spread it in a thin layer in an oiled frying pan and cook over a medium heat until crispy and cooked through.
Can you adapt the recipe?
Yes! Why not try it with sweet potato? Or use a different spice blend. There are so many ways to switch up the flavours.
Storing and reheating potato waffles
If you have any leftover potato waffles you can store them in the fridge for up to three days and then reheat them in the oven or air fryer. Don't reheat in the microwave as they will go soggy.
Can you freeze them?
Yes, if you freeze them, wrap them up well in baking paper so they don't get freezer burn. You can then reheat them from frozen in the oven or air fryer.
What can you serve them with?
As you can see, I served them with a poached egg. They'd be delicious with fried or scrambled eggs too. They make a great brunch recipe.
You could also serve them with grilled meats as a potato side dish with lunch or dinner.

- 2 Baking potatoes
- 1 teaspoon Creole seasoning I used Bart
- 1 teaspoon Vegetable oil I used light olive oil
Instructions
- Grate the potatoes. I use a food processor and keep the skins on but you can grate them by hand and peel the skins if you want too. I don't find they are noticeable in this recipe once cooked.
- Wrap the grated potato in a tea towel and squeeze to get rid of any excess moisture.
- Stir the Creole spice blend into the grated potato.
- Brush the waffle maker with a little oil and heat up.
- Add the potato and cook for about 12 minutes. If you feel it is not cooked enough feel free to cook for a little bit longer.
