Did you know you can roast a whole joint of gammon in the air fryer? It's more economical than using the oven and turns out really well too. This air fryer gammon is coated in honey and gochujang for a sweet and spicy Korean flavour.

Gammon is a really great meat too cook in the air fryer. This air fryer method will give you juicy tasty ham with a delicious caramelised coating. It's so good!
It still takes time to cook but it's better value than turning the oven on. Plus, gammon is a really affordable meat and very versatile once it's cooked. You can eat it as a main with various sides, put it in sandwiches, add it to pasta or soups. There are just so many things you can do with it.
What ingredients do you need for this air fryer gammon recipe?
This air fryer gammon has just three ingredients. And they are all in the name:
- Gammon - A joint of gammon. I used unsmoked as I find it smoky enough already but it is up to you.
- Honey - Runny honey. Any runny supermarket honey will do. It's purpose is to add sweetness. Because of the strength of flavour of the gochujang it's not worth using an expensive honey for this. That's what I think anyway!
- Gochujang - This is a Korean chilli paste made with chillies, fermented soybeans, glutinous rice and salt. It's spicy and also quite salty.

How to make air fryer ham
To make this air fryer gammon, you need to coat the gammon in the honey and gochujang. Then wrap it up in foil.
Put it in the air fryer and air fry at 170C for an hour. At this point, use a meat thermometer if you've got one and check if the gammon is fully cooked. It should reach 71C in the centre. You don't need to unwrap the gammon. If it isn't fully cooked, return it to the air fryer for another 10 minutes and check again.
Once the gammon is cooked, unwrap it and put it back in the air fryer for another 10 minutes so the outside can caramelise.
Then let it rest for at least 10 minutes before carving.

Storing the leftovers
Any leftovers can be stored in the fridge for at least 3 days in an airtight container. You can also freeze it for up to three months. Wrap it up in parchment paper and put it in an airtight freezer bag.
If you want to freeze cooked gammon, it's best to divide it into smaller portions so that it's easy to defrost the amount you want. Defrost in the fridge overnight before using.
Can you adapt the recipe?
This is a really simple recipe but of course you can experiment with different ways to flavour the gammon before air frying it. Instead of honey and gochujang you could use honey and musard or another hot sauce and honey.
It's good to add something sweet like honey as it helps the outside to caramelise. However, you could use maple syrup or agave nectar as alternatives.
How to work out the cooking time for the gammon
I definitely think it's best to use a meat thermometer to be sure the gammon is cooked thorugh. I used a 1kg joint of gammon and it was cooked thorugh in an hour. If your gammon is only 500g it will probably be ready in about 40 minutes. If it's 1.5kg, I would cook it for about 80 minutes initially.
What air fryer is best for this recipe?
Any air fryer will be fine for this recipe as long as the basket is big enough to hold the gammon. I cooked it in my newest air fryer which is the Swan Retro Dual Basket Air Fryer.
It's a great air fryer for families as it's got 2 baskets so you can cook more things in it at once. It has all the settings I need including bake, roast, grill, fries, keep warm, reheat and dehydrate, as well as air fry of course!
Can you cook it in the oven?
Yes of course! If you don't have an air fryer then the oven will also work perfectly fine. A 1kg joint of gammon will also take about an hour if you bake it at 180c or 160c (fan)

Air Fryer Gammon with Gochujang and Honey
Equipment
Ingredients
- 1 kg gammon I used unsmoked
- 80 g gochujang
- 30 g runny honey
Instructions
- Coat the gammon in the honey and gochujang. Wrap it up in foil.
- Cook in the air fryer at 170℃ for an hour.
- Check the internal temperature if you can using a meat thermometer. I like it to get to at least 71℃. If it's below, return it to the air fryer, still wrapped in foil.
- When the gammon is cooked unwrap it and return to the air fryer for 10 minutes to caramelise on the outside.
- Once cooked, let the ham rest for at least 10 minutes before carving.
