If you find plain old coleslaw a bit boring then how about making this Nandos inspired rainbow slaw instead? It's not a super spicy slaw so it's still great as a contrast with spicy chicken but it does have a little heat and definitely more flavour than regular coleslaw.

What is rainbow slaw?
Rainbow slaw is one of the side options at Nandos. And if you're not in the UK and wondering what Nandos is? It's one of the most popular restaurant chains here specialising in peri peri chicken. They serve regular coleslaw as well but the rainbow slaw also contains herbs (coriander/cilantro) and perinaise in the dressing. Perinaise is the spicy Nandos mayonnaise with flavoured with peri peri seasoning. We love it!
Ingredient notes for rainbow slaw
To make this rainbow slaw you'll need:
- Vegetables - A mixture of red and white cabbage, radishes and spring onions
- Coriander - Also known as cilantro. If you're one of those people who doesn't like it then just miss it out or add some parsley instead.
- Lemon - You'll need to squeeze the juice out. You can use bottled lemon juice instead if you want though.
- Perinaise - This is the spicy Nandos mayonnaise. If you don't have it you can use regular mayonnaise but add some Nandos sauce or Nandos salt. And if you add Nandos salt you probably won't need to season the coleslaw again.
- Greek yoghurt - Using a mixture of yoghut and mayonnaise makes the dressing a little less heavy. Of course, if you only use mayonnaise that will be fine too.
- Seasoning - A little salt and pepper to taste.

How to make rainbow slaw
It couldn't be eaiser to make this slaw. Just slice all the veggies thinly and stir in the dressing.
How can you adapt rainbow slaw
This is one of the easiest recipes to adapt. Feel free to add a few different veggies to it if you want. Different coloured peppers, red onions, cucumber - there are so many things you could add!
Switch up the dressing too by experimenting with different hot sauces if you want.
What to serve with rainbow slaw?
You can serve this with whatever you'd serve with regular coleslaw. Of course, if you want to make a Nandos fakeaway meal then make some Nandos inspired chicken to go with it. Any maybe some spicy chips too!
I also love this with any other kinds of chicken, with ribs and chimichurri steak!
It also makes a great filling for a baked potato and is lovely in a burger too.
Storing rainbow slaw
Once you've made it you can keep it in the fridge for up to three days. Always give it a good stir before using it as the dressing can sink to the bottom of the dish and stirring makes it feel like the veggies are freshly dressed.

Rainbow Slaw (Nandos Inspired)
Equipment
- chopping board
- Sharp knife
Ingredients
- 200 g white cabbage finely sliced
- 200 g red cabbage finely sliced
- 2 spring onions sliced
- 3 radishes finely sliced
- 2 tablespoon fresh coriander chopped
- 1 lemon juiced
- 1 tablespoon Perinaise Peri peri mayonnaise. Feel free to replace it with a different spicy mayonnaise if you need to.
- 2 tablespoon Greek yoghurt
- Pinch salt
- Pinch black pepper
Instructions
- Slice all the vegetables.
- Mix the lemon juice, perinaise and Greek yoghurt into the vegetables.
