This simple chicken new yorker recipe is perfect for using up bbq sauce and makes a really simple midweek meal too! Tender chicken breast, bbq sauce, bacon and cheese. What's not to love about that?
Sometimes the best recipes are those that you haven't planned to make in advance. Those recipes that just come about because of the random selection of ingredients and leftovers you can find in the fridge. That is exactly how I came to make this delicious chicken New Yorker. It's also, I should add, thanks to a little inspiration from my lovely husband who suggested I make it.
This Chicken New Yorker is a Great Way to Use up Leftovers
I wanted to make something with chicken and bacon as I had an open pack of bacon as well as some chicken breasts. They all needed to be used up. Now, there are many ways to use bacon and it can add so much flavour to a simple chicken dish.
I could have made a saucy chicken and bacon casserole but luckily at the last minute we remembered the jug of bbq sauce in the fridge. I'd made bbq pork in the slow cooker the day before and I always end up with too much sauce. Usually it sits in the fridge for a day or two before being thrown away. Not this time. Probably not next time now either.
Just 4 Ingredients!
The recipe for Chicken New Yorker is very easy to make. Just 4 ingredients and of course you can use a bottle of sauce if it's easier. Although if you want to try the bbq pork the day before I'm sure you won't be disappointed either!
A Super Easy Recipe
Basically this New York chicken recipe is just a matter of assembling. You take the chicken in and out of the oven adding an extra ingredient each time. You can't get easier than that. And that makes it a great dish to make on nights when you really don't want to spend too long preparing dinner.
What can you serve with this barbecue sauce chicken?
I like to make my meals healthy when I can so I think cheesy meals are great with salads on the side. The vegetables balance out the richness.
So, I like to serve this Chicken New Yorker with salad but chips are great too. It also goes really well with garlic bread such as this indulgent garlic and herb quickbread.
Can you adapt this chicken New Yorker?
I'm sure you can adapt it. Barbecue sauce, bacon and cheese is a brilliant combination with chicken but why not experiment a little? You could use a different sauce instead of barbecue sauce. Why not try your favourite hot sauce?
If you don't eat bacon or don't have any bacon but fancy a cheesy chicken dinner then just leave it out!
You could also try a different cheese. Mozzarella would work well. Or just use your favourite cheese, as long as it's one that melts!
What if you don't have any chicken breasts? You can also use pork chops as an alternative.
Use chorizo instead of bacon
I am a huge fan of chorizo and think this dish would work really well with chorizo and hot sauce.
Can you reheat the leftovers?
If you have any leftovers then store them in the fridge for up to 3 days. You can reheat them but the chicken breasts can sometimes go a bit dry. You can eat the leftovers cold too though.
Ideas for using up leftover chicken New Yorker
The leftovers might not be quite as good but don't waste them. There are still some tasty ways to eat them up. Why not:
- Slice the leftovers up and serve them cold with a salad
- Slice them up and put them in a sandwich
- Make a barbecue chicken pizza and put the leftovers on top
Recipe
Chicken New Yorker
Ingredients
- 2 chicken breasts
- 2 tablespoon homemade bbq sauce Use a bought bbq sauce as an alternative
- 4 strips streaky smoked bacon
- 50 g Cheese grated (I used cheddar)
Instructions
- Grease an ovenproof dish and heat the oven to 200C
- Put the chicken breasts in the dish and brush with the bbq sauce
- Bake in the oven for 15 minutes
- Take the chicken out and cover with the bacon.
- Return to the oven for another 15 minutes.
- Sprinkle the cheese over the top of the bacon.
- Return to the oven for just 5 minutes.
