This healthy black bean and sweet potato soup recipe is perfect as a light lunch or dinner. It's easy to make and the leftovers taste even better the next day!
This black bean sweet potato soup is a great recipe for an easy healthy lunch. I like to make a big batch at the start of the week and then store it in the fridge for up to 3 days or freeze some of it. It's lightly spiced and so warming as well as being great as a vegan recipe choice.
Make this black bean and sweet potato soup as hot as you like!
Well, I say it's a lightly spiced soup, that does depend on what chilli pepper I decide to use! I love using spices in cooking and I love a little chilli heat too.
However, I don't want my food to blow my head off or be so strong that all I can taste is the chilli pepper! The spices of cinnamon, cumin and smoked paprika are very warming in this soup and go perfectly with the sweet potato.
The black beans are hearty and make it into a really filling substantial soup. If you have a really big appetite add some bread on the side too!
I first came across this soup a few years ago when I was part of the Secret Recipe Club. I have adapted it from a recipe on A Little Bit of Everything. The original soup recipe was cooked in the slow cooker. However, I've made this recipe a lot since and as well as adapting the ingredients I also prefer not to make it in the slow cooker.
The problem with cooking black beans in the slow cooker
The problem with slow cooking black beans is that they tend to loose their colour and look brown. The sweet potatoes go an unappetising brown as well and the stock is also a funny brown colour.
Now, some brown food can be great, but I just feel that this sweet potato soup looks better when it's not cooked in the slow cooker!
Can you use dried black beans for this soup?
I usually use tinned black beans for this soup. However, you can use dried beans and if you do want to use dried beans then I'm going to contradict everything I just said!
If I make this soup with dried beans I soak the beans overnight in water and then use the slow cooker. I put all the ingredients except the coriander (cilantro) into the slow cooker and cook it on low for 8 hours. I stir the coriander in at the end.
The beans may stain the other ingredients but it will still be a healthy tasty and hearty homemade soup. It's also great vegan recipe.
What can you do with the leftovers?
If you don't eat all this soup as soon as you've made it then you can keep it in the fridge for at least three days. I reheat it in the microwave but you can put it in a saucepan and reheat it on the stove top too.
It also freezes well and you can freeze it for up to three months. Defrost overnight and then reheat.

Black Bean and Sweet Potato Soup
Ingredients
- 1 onion diced
- 380 g tinned black beans rinsed and drained
- 1 large sweet potato peeled and diced
- 2 cloves garlic crushed
- 1 yellow pepper
- 1 green chilli pepper
- 500 ml vegetable stock
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon cinnamon
- 15 g fresh coriander cilantro
Instructions
- Put a little oil in a saucepan and cook the onion gently for 5 minutes. Add the garlic and cook for another minute.
- Stir in the spices then add all the other ingredients except the black beans.
- When the potato is cooked (about 20 minutes), stir in the black beans and heat through. Stir in a handful of chopped coriander at the end.
- Serve topped with a little more fresh coriander.
