Stews and Casseroles

Stews and casseroles make a great choice if you're looking for easy one pot meals.   Many of these recipes are suitable for batch cooking as well.

Why not make a big pot of your favourite stew and then eat up the leftovers the next day?   Alternatively freeze the leftovers in individual portions so they are easy to defrost and reheat another day.   Meals like stews are perfect for that and make life so much easier when you are pressed for time.

Stew and casserole recipes are also great for hiding vegetables if you do have picky eaters at home.   Sometimes I blend some of the vegetables so they are impossible for my kids to pick out!

Finally, stews are healthy.  You can add all kinds of vegetables and they're a great way of using up any leftovers or slightly past their best veg. All the nutrients that come out of the vegetables as they cook stay in the sauce too.
