These easy cheesy chorizo pastries are made with just 3 ingredients! They're perfect for summer picnics, party snacks or even for dinner with a large side salad.
So easy you don't really need a recipe!
I have made these little pastries so many times in the past but they haven't quite made it onto the blog before. I'm not sure why. Maybe it's because they are so easy you don't actually need a recipe. Or maybe it's because they are not very original. After all, I'm sure you've seen them before!
However, like all quick and easy recipes, sometimes you just need a reminder of how simple something is before you make it yourself. I hope that's what I'm doing here. I'm just reminding you that these pastries are so easy it would be a shame not to make them! They need just three ingredients: ready rolled puff pastry, sliced chorizo and cheese. What could be easier?
They could however be more complicated. You could add an egg wash before baking them. Even so, that would still only make 4 ingredients. I don't bother with an egg wash for these. They come out of the oven beautifully golden brown on the outside anyway. Why not save the egg for something else?
Should you make your own puff pastry?
If you really want to make life a challenge you could make the puff pastry from scratch. I've done it in the past but these days? No way! It's the type of thing that's fun for a one off challenge and so you can tell yourself you can make puff pastry. After that, what's the point? I prefer my own homemade shortcrust pastry but puff pastry is definitely worth buying.
What to eat with these cheesy chorizo pastries
Life should be easy in summer and these little cheesy chorizo pastries are perfect for this time of year. Why not have them for lunch with a big salad or bring some along on a picnic or for a snack on a long summer walk? I have to say, I'm a real pastry addict and find it hard not keep eating these!
How to adapt these easy chorizo pastries?
There are so many ways you can adapt this recipe. Why not use a different meat instead of chorizo? Ham or salami would both work.
Use something else completely. I love these type of palmiers made with olive tapenade. You can also spread your favourite chutney or pesto onto the puff pastry. What's your favourite filling?
Storing these chorizo pastries
These chorizo pastries will keep in the fridge for about three days. You can also freeze them for up to three months. Defrost them at room temperature or in the fridge.
Can you reheat these chorizo puff pastry swirls?
I love warm flaky puff pastry and definitely like to reheat these. I pop them in the oven at 180C for 5 minutes to bring back that just-baked crispiness.
Of course, if I'm taking them out with me for a picnic I can't do that but if I'm eating them up at home I always like to reheat them a little!
Recipe for Cheesy Chorizo Pastries
Recipe
Cheesy Chorizo Pastries for Summer Picnics
Ingredients
- 375 g pack of ready rolled puff pastry
- 150 g sliced chorizo
- 40 g grated cheese I used red leicester but cheddar would work well too
Instructions
- Line 2 baking trays with non stick baking paper. Turn the oven on to heat up to 200C
- Unroll the puff pastry.
- Sprinkle half the cheese all over the pastry.
- Put the chorizo on top of the cheese in a single layer.
- Sprinkle the rest of the cheese over the top.
- Roll the pastry up again.
- Cut into slices about 1cm thick.
- Lay the slices on their sides on the baking trays with space between each one.
- Bake in the oven for 10-15 minutes.
- Cool on a wire rack.

I'm sure you could use a different type of meat. I think smoked chicken or turkey slices would work well.

i think it is all too easy to forget that not everyone has a lot of cooking experience. It is simple tasty recipes like this that just might get someone really hooked on baking but if we dont show the simple stuff how are they ever to get started.
I am so with you on the why make your own puff pastry and i often like here use the ready rolled not cos I'm lazy but because that what my local shop stocks. Ready rolled is better for these anyway as it so even .

I just love how puff pastry just flakes, crumbles and melts in the mouth and thiese lovely elephant ears are just the perfect way to use it.
