This chicken and callaloo curry is a great Caribbean recipe
Caribbean food week in the UK runs from 21-28 August 2018 and what better way to join in at home than to make this easy Caribbean chicken and callaloo curry. It's packed with healthy vegetables and tender chicken in a spicy coconut milk based sauce. If you're new to Caribbean food then it's a great recipe to start with.
A Caribbean Inspired Recipe
The inspiration for this chicken and callaloo curry came after I was sent a hamper of Caribbean products from Grace Foods UK, the UK's leading Caribbean food supplier. I haven't cooked much Caribbean food before, except this ackee recipe, so I'm not an expert. Nevertheless, I do love Caribbean flavours so I was excited to start cooking.
As I love curries and spicy stews, I immediately wanted to make a Caribbean inspired curry using the Caribbean curry powder, coconut milk and callaloo. I'd say it's Caribbean-inspired rather than authentic as I didn't thoroughly research Caribbean curries before making it. Even so, despite my limited Caribbean food knowledge , it definitely tasted of the Caribbean to me.
What is Callaloo like? Is Callaloo like spinach?
If you've never had callaloo before then the nearest vegetable to compare it with is spinach. If you can't find callaloo then you can use either fresh or frozen spinach as a replacement. It was the first time I'd used callaloo and it went really nicely in the curry.
I also used aubergine as I had one that needed to be used up but you could substitute it for other vegetables. Sweet potato would be lovely. If you wanted a hotter curry you could add extra chilli peppers too. I just added one but of course, it's up to you.
More Caribbean Recipes
When I first made this chicken and callaloo curry I was definitely a novice at Caribbean recipes. However, since then I've made quite a few recipes inspired by the Caribbean. Do have a look at some of these: healthy spiced vegetable fries, Caribbean beef patties, Caribbean three bean salad and easy jerk chicken. The easy jerk chicken has become a real family favourite recipe and as it's not too hot the kids love it too!
Ways to adapt this Chicken and Callaloo Curry
I always find that a curry is a great way of using up any slightly wilted vegetables. I hate food waste so I'll often throw a load of slightly soft vegetables into a curry. Of course, I'm not telling you to use wilted vegetables in this but if you do have any slightly soft courgette or peppers then go ahead and throw them in!
Potatoes or sweet potatoes would also be great added to this.
What about if you want a vegetarian curry? Why not use a tin of cannellini or butter beans instead of the chicken?
And if you can't get hold of callaloo? Most supermarkets sell tinned callaloo but if you can't get it then just use spinach or even kale instead.
Recipe
Chicken and Callaloo Curry
Ingredients
Marinade Ingredients
- 1 lemon juiced
- 2 tablespoon olive oil
- 2 teaspoon Jamaican curry powder
- 500 g chicken thigh meat diced into large pieces
Ingredients for the Curry
- 1 onion chopped
- 1 tablespoon ginger finely chopped
- 1 chilli finely sliced
- 2 cloves garlic crushed
- 2 teaspoon curry powder
- 3 tomatoes diced
- 1 aubergine diced
- 400 ml coconut milk
- 280 g tin callaloo drained
To Serve
- 4 tablespoon Coriander cilantro, chopped (optional)
Instructions
- Prepare the marinade at least an hour in advance. Coat the chicken well and leave in the fridge until ready to serve.
- Heat a little oil in a saucepan. Add the onions, ginger, chilli pepper and garlic. Cook gently for about 5 minutes until softened.
- Stir in the extra curry powder and then add the chicken. Cook for a couple of minutes. Stir the chicken a couple of times so that it is white on the outside.
- Add the tomatoes, aubergine and coconut milk. Bring to the boil then lower the heat and simmer gently for 30 minutes.
- Add the callaloo and cook for another 5 minutes.
- Serve with rice. Sprinkle the coriander (cilantro) on the top.
