Crispy on the outside and soft and coconutty on the inside. If you top these coconut macaroons with mini eggs they make the perfect Easter treat!
When I was younger, I remember eating soft coconut macaroons topped with a glace cherry. They weren't too sweet but they were a tempting snack. I ate this type of macaroon long before I tried the delicate and now more popular French variety.
I've made those macaroons in the past too. The results haven't been pretty but they've tasted good. Luckily, these coconut macaroons are far easier to make. I'd go so far as to say foolproof.
They are such a simple treat to make. The basic recipe is just three ingredients and I know the bought ones contain a lot more ingredients than that! Ok, if you add chocolate and mini eggs there are 5 ingredients!
They are very quick to make too. You can throw them together in less than 5 minutes plus baking time. If you want an easy Easter snack to bake for your family then that's all you need to do.
Of course, I have done a little more than that here. As Easter is just around the corner I wanted to add a bit of an Easter theme to my macaroons! It really only took a few more minutes work after they had baked and cooled to melt the chocolate and place the mini eggs on top!
Ingredient notes for coconut macaroons
Yes, you only need three or 5 ingredients to make these. They are:
- Dessicated coconut - I use unsweetened but if you have sweetened dessicated coconut you can just reduce the sugar a little.
- Eggs - I normally use 2 large eggs but have recently only been able to find small eggs and so have used 3 small eggs and that has also worked.
- Caster sugar - Known as superfine sugar in the US.
- Chocolate - You can use milk or dark chocolate, whichever you prefer.
- Mini eggs - Feel free to experiment with different topping, especially if it isn't Easter and you want to make these. You could use marshmallows or nuts.
How to make coconut macaroons
Do check out the recipe card further down the post too. You can make these coconut macarons in only 5 minutes (plus baking time)!
First break the eggs into a large bowl and whisk them. Whisk in the sugar and then fold in the dessicated coconut. Leave the mixture to stand for half an hour.
Line a baking tray with non-stick baking paper and take spoonfuls of the coconut mixture and place on the baking tray. You could use an ice cream scoop if you have one.
Preheat the oven to 180°C or 160°C(fan) and bake for 15 minutes. Check how browned they are. You may need to bake them for another 3-5 minutes.
LEt them cool on the tray for 5 minutes and then peel them off the baking paper and finish cooling on a wire rack.
If topping with chocolate, melt the chocolate in the microwave or over a bain marie. Take spoonfuls of chocolate and put on top of the macaroons and then put the mini eggs on top.
Can children make these coconut macaroons?
Although I made these coconut macaroons for my children you could get your children to help make them. They're a really simple Easter snack to make and would make a fun Easter activity during the holidays.
Honestly, they really are as simple as that old favourite: chocolate cornflake clusters.
How long do they stay fresh?
Once you've made these coconut macaroons you can keep them at room temperature in an airtight container for at least 3 days. Alternatively, you can store them iin the fridge and they should keep well for a week.
Can you freeze coconut macaroon?
Yes, you can freeze them but it's best to freeze them without the melted chocolate and mini eggs.
Defrost them at room temperature and decorate them afterwards if you want to.
Recipe
Coconut Macaroons Topped with Mini Eggs
Ingredients
- 2 eggs beaten, I use large eggs
- 225 g desiccated coconut I use unsweetened
- 150 g caster sugar superfine sugar
- 50 g milk chocolate Use dark if you prefer
- 39 Mini eggs Feel free to use a different topping.
Instructions
- Beat the eggs in a bowl then whisk in the sugar. Finally fold in the the coconut.
- Set aside for half an hour.
- Line 2 baking trays with non stick baking paper.
- Take heaped dessert spoonfuls of the mixture and place on the baking trays. I ended up with 13.
- Bake the macaroons in a preheated oven at 180°C (160°c fan) for 20 minutes.
- Leave to cool on a wire rack.
- Melt the chocolate in a bowl in the microwave. Heat for 40 seconds. Stir. Heat for another 10 seconds at a time until melted.
- Put a small spoonful of chocolate on the top of each macaroon. Top each one with 3 mini eggs.
- Leave to set.
