Make this air fried pork loin wrap as soon as you can! The pork is coated in a delicious spicy Mexican inspired seasoning and then air fried along with peppers and onion. It's so easy to make and so tasty!
I love Mexican flavours and I love my air fryer. So, I've combined the two by making up a delicous spicy rub for the pork steaks and then slicing them up and stuffing in a wrap.
So so good!
But what if you don't have an air fryer? Don't worry, this spicy Mexican meal can just as easily be cooked in a wok or frying pan. Stir fry the veggies and then shallow fry the pork. It couldn't be easier.

Ingredient notes
These are the ingredients I used to make these air fried Mexican pork wraps. Do check out the recipe card further down the post for quantities though:
- Pork loin steaks - These steaks are ideal as they are boneless and fairly lean. I always cut the large piece of fat off the edge before cooking though as there isn't time for it to crisp up in the air fryer
- Spices - I use a mixture of cumin, smoked paprika, chilli powder, garlic powder and salt
- Olive oil - If you don't have olive oil, vegetable oil is fine too.
- Lime - I use about a quarter of the lime in the marinade then serve the rest of the lime with the wraps so you can squeeze extra lime over the pork when serving if you wan
- Peppers - I try to use two different coloured peppers just to make it more colourful but it doesn't matter what colours you use.
- Red onion - You can use a brown onion instead but I like red onions more for this.
- Wraps - I use large flour tortillas but you can use corn tortillas instead.
- Salsa - I've used salsa from a jar but you can make your own pico de gallo instead if you want.
- Cheese - I've just used cheddar. I think Red Leicester works well too though.
- Coriander leaves - I love coriander and it makes a great garnish. If you're not a fan then just miss it out!
How to make air fried pork loin wraps
Do check out the recipe card further down the post. Basically everything for these wraps is cooked together in the air fryer.
If you have time then make the spice rub for the pork up to 24 hours in advance. Rub the spices, olive oil and lime juice into both sides of the pork and leave it to rest.
Put the peppers and onion in the bottom of the air fryer and if you have a rack then place it above them. Put the pork on the rack and air fry at 200C for 15 minutes. If you have a meat thermometer you can check if the pork is cooked through when it reaches at least 63C although I like to cook it a little bit longer.
Once the pork is cooked, let it rest for 5 minutes and then slice into strips. Fill the wraps with the pork, the peppers, salsa, grated cheese and herbs.
Can you adapt the recipe?
Yes of course! You can make these wraps with chicken or beef steak instead of pork loin. You could even make them with salmon or halloumi. You may just need to alter the cooking times depending on what you use instead of pork.
Feel free to add a few extras if you like too. Jalapenos would also be lovely in these wraps. You could also add sliced avocado or a simple guacamole. Why not make my chipotle lime mayo?
Storing the leftovers
Any leftover cooked pork and peppers will keep well in the fridge for at least 3 days in an airtight container. You can reheat in the microwave.

- Put them in a salad
- Use as a jacket potato topping
- Use as a pizza topping
- Make quesadillas
- Just put in a sandwich

Air Fried Pork Loin Wrap
Equipment
Ingredients
- 450 g pork loin steaks
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon chilli powder
- ½ teaspoon garlic powder
- Pinch salt
- 2 teaspoon olive oil
- ¼ lime juiced
- 2 peppers cut into strips
- 1 red onion cut into eighths
- 2 large tortilla wraps
- 2 tablespoon salsa
- 30 g cheese grated
- 1 tablespoon coriander leaves chopped
Instructions
- Cut the thick fat off the side of the steaks. Rub the spices, olive oil and lime juice into the pork steaks and set aside for an hour.
- Put the peppers and onion in the bottom of the air fryer but on top of the crisper plate. Put a rack on top if you have one and put the pork steaks on the rack. Air fry at 200℃ for 15 minutes, turning the pork over half way through.
- Let the pork rest for 5 minutes once it has cooked and then slice the pork into strips. Fill the wraps with salsa, the air fried veggies, pork, cheese and coriander leaves.
