If you like a salad dressing with a little spice then this jalapeno lime vinaigrette is it! It's deliciously spicy and perfect on this couscous and roasted vegetable salad but also delicious on any other kind of salad or even on roasted vegetables.
Some people may say that salads are boring but I firmly believe that that is just because they don't know the value of a good salad dressing. This jalapeno lime salad dressing transforms anything you put it on. It's spicy from the jalapenos, zesty from the lime and sweet from honey. It's a brilliant sald dressing combination that livens up all kinds of dishes.
It adds spice, zest and sweetness to salad leaves or roasted vegetables. Here you can see it on giant couscous but it would be great on pasta, rice or lentils salads too. I could quite happily top all kinds of grain and bean salads with this jalapeno dressing too.
Ingredient notes for jalapeno lime salad dressing
You don't need many ingredients to make this jalapeno lime vinaigrette:
- Jalapenos - I've used pickled jalapenos from a jar. Of course, you could use fresh jalapenos too. The flavour would be different and you probably wouldn't need so many but the taste would still be great.
- Lime - I used the juice of one lime
- Honey - Use a mild runny honey
- Olive oil - Use a good quality extra virgin olive oil.
- Seasoning - A pinch of salt and black pepper to taste.
How to make jalapeno salad dressing
I put everything in a small food processor and blitzed. If you don't want to use a food processor you can finely dice the jalapenos and whisk everything in a jar instead.
As this is dressing, do taste it and add extra lime juice, honey or seasoning after blending.
Can you adapt the recipe?
Yes, feel free to use a different kind of chilli pepper. Jalapenos work really well with limes but you could use something else instead. The key is always to mix together and taste and then add extra. For example, if it's too sharp, add extra honey. Too spicy, extra oil. Too mild, extra jalapenos!
What can you serve it with?
In the pictures I've served this jalapeno, lime and honey dressing with air fried cauliflower, broccoli, mushrooms and couscous. However, it works really well on a leafy green salad or on a tomato based salad.
How long does it stay fresh?
If you store it in the fridge it will stay fresh for at least a week. Just shake or whisk it before serving.
