You may not have thought of putting Doritos in a salad before but why not? Croutons are often used in salads so why not add some crunch with Doritos instead? This easy Mexican inspired salad is topped with crushed Doritos to give it loads of flavour and texture.
I love this salad. If you want to enjoy different textures then it's definitely got them all. It's crunchy, fresh, juicy and spicy. If you love these kind of Mexican flavours then it's definitely a salad you'll be making on repeat. You can have it as a main meal or a side dish. Add the chicken or leave it out for a vegetarian option.
It's also easy to adapt and I'll give a few suggestions further on. Basically, if you want to make a simple colourful salad with Mexican flavours just a bit more bold, then topping it with Chilli Heatwave Doritos is definitely the way to go!

Ingredient notes for Mexican inspired Doritos topped salad
To make this salad you will need:
- Doritos - I use Chilli Heatwave Doritos as they are my favourite. I think they have the most flavour and I love the spicing on them. Of course, feel free to use a different flavour of Doritos or just use this salad for inspiration and use different kind of tortilla chip instead.
- Sweetcorn - I used frozen sweetcorn and just defrosted it in the microwave first.
- Kidney beans - These could be replaced by black beans or any other kind of bean that goes well in salads.
- Tomatoes - Use any kinds of tomatoes. It works with regular tomatoes or use more cherry tomatoes.
- Cucumber - Cucumber adds a lovely refreshing element.
- Bell pepper - I used a red pepper but any colour of pepper works well.
- Red onion - Red onion works really well in salads. It can also be replaced by a few spring onions if that's what you have or even a mild brown salad onion.
- Coriander - If you're not a fan of coriander you can use a different herb such as parsley, although I think it goes really well with these flavours.
- Chicken - Sometimes I make this salad meat-free with just the beans but it also goes really well with leftover roasted chicken or leftover chicken from chicken skewers.
- Yogurt - I used fat-free natural Greek yogurt. You can use full fat natural yogurt instead though
- Cajun paste - This adds some spice and flavour to the salad.
How to make Mexican salad topped with Doritos
Do check out the recipe card further down the post for further instructions. Basically this salad is really simple to make. Just chop up all the vegetables and mix everything together.
Stir the Cajun paste into the yogurt. Taste it and add a little extra till you get it to the right heat level.
Plate up the salad, drizzle with the yogurt Cajun dressing and then crush the Dorictos a little and scatter them on top of the salad. Eat straightaway so the Doritos don't go soggy.
How to adapt this Doritos topped salad
This Doritos salad is really easy to adapt. First of all, don't worry about sticking to the exact quantities for each ingredient. If you don't have something for example cucumber, just miss it out!
You can also add more ingredients. I often add pickled jalapenos or finely diced fresh chilli pepper. They give it a bit more heat too.
Can you make this salad in advance?
Yes you can. Just don't add the Doritos until you are serving it. If they are sitting in the salad they will lose their crunch. But, the Cajun yogurt dressing can me made in advance and so can the rest of the salad.

Doritos Salad Topping
Ingredients
- 130 g sweetcorn
- 100 g kidney beans
- 2 tomatoes diced
- 80 g cucumber diced
- 1 red pepper Can be replaced with a different colour of pepper
- ½ red onion sliced
- 2 tablespoon coriander chopped
- 200 g cooked chicken optional
- 30 g Chilli heatwave Doritos crushed
Ingredients for the Dressing
- 2 tablespoon fat-free natural yogurt You can use full fat yogurt if you like
- 1 teaspoon Cajun paste
Instructions
- Chop up any vegetables that need to be chopped. Then mix everything together.
- Stir the Cajun paste into the yogurt.
- Put the salad on a plate, top with crushed Doritos and some of the dressing.
- Eat immediately so the doritos stay crunchy.
