Easy, delicious and perfect for batch cooking, this baked Italian chicken recipe with olives, tomatoes and rosemary is perfect for a tasty chicken dinner!

One thing I am always happy to find another recipe for is chicken. It goes with so many flavours and can be used in so many different ways. One of my favourite easy ways of cooking it is baking it in the oven with various vegetables, herbs and spices. For example one of our favourite meals is this harissa chicken tray bake.
Well, a long time ago I used to take part in a club called the Secret Recipe Club and this easy Italian chicken recipe is inspired by a recipe by Birthe who used to blog at New Yorker by Heart. I picked this recipe as it contained flavours I love and I knew it would be easy to make after work. I also fancied something with chicken and olives. To be honest, I often fancy recipes with chicken and olives!
A great midweek chicken dish
This baked Italian chicken recipe really is a great recipe to make for a midweek meal. It does take 40 minutes in the oven but it's very quick to prepare so you can relax and do other things while it bakes. I would say it takes less than 10 minutes to prepare so altogether it is ready in under an hour.

What can you serve with this baked Italian chicken?
Well, I often like to serve it with baked potatoes that I can pop in the oven with the Italian chicken. I often cook them for 3-4 minutes in the microwave first so they have time to cook through. You could serve it with any kind of potatoes though or just some fresh Italian bread
It would also be a great recipe to make with crispy fried gnocchi! I've recently discovered how tasty fried gnocchi are and they are a such a great alternative to potatoes as a side dish.

How can you adapt this Italian baked chicken recipe?
Well, feel free to vary the colours of peppers you use. You could also add extra Italian vegetables such as diced aubergine and courgettes. If you don't like chilli peppers then just miss out the chilli or use just pinch of dried chilli flakes instead.
I used chicken breasts this time but the recipe is just as good made with chicken thighs or legs.
If you don't want to bother switching the oven on then just simmer it gently on the hob.

Can you batch cook this Italian chicken?
Yes, this recipe is great for batch cooking. Just add more chicken, more vegetables and increase the stock a little. If you are using a much bigger pot then it may need longer in the oven too. Just add a little extra time and if you're not sure it's ready then take out one of the pieces of chicken and cut into it to check it is cooked through.
Can you Freeze Italian Chicken?
Yes, once the chicken has cooked and cooled it can be frozen for up to 4 months. Let it defrost thoroughly before reheating in the oven or microwave.

Baked Italian Chicken Recipe with Olives, Tomatoes and Rosemary

Baked Italian Chicken Recipe
Ingredients
- 2 tablespoon flour
- Pinch dried oregano
- Pinch dried thyme
- Pinch dried basil
- Pinch salt
- Pinch black pepper
- 4 chicken breasts
- 1 clove garlic crushed
- 1 chilli pepper sliced
- 3 tablespoon olives
- 1 red pepper cut into strips
- 100 g cherry tomatoes
- 1 tsb dried rosemary
- Pinch black pepper
- 300 ml chicken stock or white wine
Instructions
- Mix the dried oregano, thyme, basil, salt and black pepper into the flour
- Coat the chicken in the seasoned flour mixture.
- Heat a little oil in a frying pan. Add the crushed garlic and sliced chilli and after about 20 seconds, the chicken. Brown the chicken on all sides.
- Place the chicken in an ovenproof dish. Surround with the olives, red pepper and cherry tomatoes. Sprinkle with the rosemary and season with black pepper.
- Pour the stock into the frying pan with the leftover garlic and and chillies. Bring to the boil and scrape any bits off the bottom of the pan. Pour this over the chicken and vegetables.
- Cover the dish with foil so it stays moist and doesn't dry out. Bake in the oven at about 200C for about 40 minutes. Serve with potatoes or bread.

Love the sound of this chicken dish, super healthy too. I don't like whole olives for some silly reason but love the whole tapenade thing so would perhaps try to use that in the stock. I think chicken and olives are absolutely heavenly!

I think whole olives are less strong when they are cooked but yes, tapenade would be good as an alternative!

Great flavours, you can't go wrong with Mediterranean herbs especially when it comes to chicken. I'd definitely use wine rather than chicken stock for my batch:)

You could easily make a swap. I think sundried tomatoes would work well as they would add lots of flavour in the same way that the olives do.
