This creamy avocado spaghetti with fresh chilli and lemon juice is a perfect spring pasta recipe. It's fresh and citrusy with a hot chilli kick too! It's also incredibly easy to prepare, making it an ideal midweek meal.
Get out of your pasta rut!
I don't know about you but in our house, pasta is one of the recipes I make when I have absolutely nothing planned. I also tend to make the same easy tomato pasta with just a few adaptations. We are definitely in a rut as far as pasta goes and however nice that pasta is, I decided I had to mix things up a bit. I even stepped out of my comfort zone with the choice of pasta. Instead of using my normal favourite of penne, I picked spaghetti to go with this vibrant avocado pasta sauce.
I promise the creamy avocado pasta sauce will have you licking your plate
This new pasta recipe still includes some of my favourite ingredients: garlic and chilli peppers but in a creamy avocado sauce. The combination of avocado, lemon, garlic and chilli is definitely not a new one and it's pretty much guaranteed to have your family licking their bowls at the end of the meal. Not only will it be a hit, it could not be simpler to prepare.
Ways to adapt the Avocado Spaghetti
There are so many ways you can adapt this. I used a bird's eye chilli but jalapenos would be great in this. If you don't like too much heat, scrape out the seeds first. And if you're not a chilli fan at all, just leave it out altogether.
If you want to add more vegetables then frozen peas or sweetcorn can be added to the pasta water near the end of the cooking time. Chopped fresh tomatoes are also great to stir in at the end too.
I topped the dish with a little grated parmesan but for a vegan version, just leave it out or use a vegan parmesan instead.
What equipment do you need to make the avocado sauce?
I used my new Braun Multiquick 5 Vario hand blender from JD Williams. It comes with a whisk, chopper and a traditional hand blender. For this recipe I used the hand blender which comes with a tall plastic cup for blending the ingredients in, which is really practical. I've also found the other attachments useful and so far I've used the whisk for Yorkshire puddings and the chopper for energy balls. It has 21 speeds and is easy to use and clean. I know I'm going to be using it a lot this summer!
Recipe
Avocado Spaghetti with Lemon and Chilli
Ingredients
- 160 g spaghetti
- 2 small avocados
- 3 tablespoon extra virgin olive oil
- 1 clove garlic
- 1 tablespoon fresh basil
- ½ lemon juiced
- 1 chilli pepper remove the seeds if you don't want it to be too hot
- Pinch salt
- Pinch black pepper
- 20 g parmesan grated (optional) and can be replaced with a vegan alternative
Instructions
- Start cooking the pasta according to the pack instructions.
- Using a stick blender or food processor, puree the avocado, olive oil, garlic, basil, lemon juice, chilli pepper, salt and black pepper.
- Taste the sauce and add a little extra lemon juice or seasoning if necessary.
- Drain the pasta and return it to the pan. Stir in the avocado sauce. Stir well to coat all the pasta.
- Serve straightaway. Top with the parmesan and more black pepper or even some freshly sliced chilli pepper.

I have to admit we're in a bit of a rut where our quick pasta dishes are concerned too Corina (& yes ours go to pasta sauce is also tomato with a few veggies thrown in for good measure).
