This healthy vegan spiced leek and potato soup makes a great winter warming meal. It's a great blender soup, perfect served with bread for an easy midweek dinner and the leftovers are delicious the next day too!

I don't know about you but in our house rarely a week goes by without me making soup. It's such an easy meal to make and if you make a big pot you really can spend the next few days just eating leftovers. Or pop them in the freezer for later!
You might have guessed it but I love spicy soups. Just look at my red lentil soup with curry spices or my Moroccan chickpea soup with roasted chickpeas! Yes, I am definitely a fan of healthy spicy soups.
A twist on a classic soup recipe
Leek and potato is a classic soup recipe. I must have seen it on so many pub menus too! This spiced leek and potato soup takes that classic soup idea but then makes it extra special by adding a few spices. After all, in my opinion, a few spices definitely add flavour and taste to a soup.

A healthy soup that's vegan too!
The great thing about this soup is that it's vegan and cooked without oil which definitely makes it a healthier soup. You won't feel like you're missing out though as it gets it's creaminess naturally from the potatoes and coconut milk.
Do you need any special equipment to make spiced potato and leek soup?
I made this creamy spiced potato and leek soup in my new Froothie Evolve* blender. It's a fantastic blender as it cooks and blends so you can just load it up and it does the rest.
You don't even need to peel the potatoes! Just scrub them of course.
It takes just 30 minutes to go from the raw ingredients to a super smooth creamy soup.
I also use this blender to make my spiced celeriac soup. It's not just a great blender for soups though. I even used it to make this pina colada nice cream!
Can you make this soup without a power blender?
If you don't have a powerful blender then you can still make this soup and I have included instructions in the recipe card below. As long as you have at least a stick blender you can still make it!
Can you adapt this spiced potato and leek soup?
If you don't like the spices to be too strong then reduce the amounts. This soup is quite strongly spiced as that's how I like it. However, everyone's tastes are different and you can always stir a little extra spice in at the end if you feel you haven't added enough.
You can also substitute the potatoes for sweet potatoes. They go really well with the spices and taste great as an alternative in this.
Can you change the spiciness of the soup?
If you want a hotter spiced soup then add a little extra cayenne pepper. If you want spiciness but not too much heat then miss out the cayenne. Or, if you don't have all the spices then use your favourite curry powder instead or just garam masala.

Spiced Leek and Potato Soup
Equipment
- Froothie Evolve
Ingredients
- 1 onion chopped
- 1 leek chopped
- 150 g potatoes diced (no need to peel)
- 1 clove garlic
- 1 teaspoon garam masala
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- ½ teaspoon turmeric
- ½ teaspoon cayenne pepper
- 500 ml light coconut milk
- 300 ml stock
- 2 tablespoon parsley chopped (to serve) (optional)
Instructions
How to Make this Soup in the Froothie Evolve
- Put all the ingredients in the Froothie Evolve. Start the smooth soup function. It will be ready in 30 minutes
How to Make this Soup on the Hob
- Heat a little oil in a saucepan. Add the onion and leeks and cook gently for 5 minutes so they soften but don't brown.
- Stir in the garlic (crushed or chopped), the potatoes and the spices. Then add the coconut milk and stock. Simmer for 20 minutes until the potatoes are fully cooked.
- Transfer the soup in batches to a blender and blitz. Alternatively use a stick blender.
- Serve with chopped parsley or croutons
