Homemade burgers are always a hit in my household and these homemade tamarind lamb burgers are no exceptions! Flavoured with garlic, ground and fresh coriander and a little tamarind bbq sauce, they are a brilliant choice for anyone who loves lamb!
I have to admit that I don't make homemade lamb burgers as often as I should! That is definitely a mistake because these bbq tamarind lamb burgers were packed with flavour and really filling.
They are pretty big burgers. I made two hearty lamb burgers but you could easily make 3 and serve another person! Just scale the recipe up or down depending on how many people you are serving too.
I used a tangy bbq tamarind sauce from Raju Sauces but if you can't get it, don't let that put you off. You could use a teaspoon of tamarind paste instead to get that tangy sour flavour.
I think these homemade lamb burgers are a brilliant dinner idea for anyone who loves lamb and wants an easy tasty recipe that just happens to be a real crowd pleaser too!
Ingredient notes for tamarind lamb burgers
Do check out the recipe card further down the page for quantitites. To make these burgers you'll need:
- Minced lamb - I used 20% fat mince. If you use mince that has a very low fat content the burgers are more likely to fall apart as they are cooking and dry out.
- Garlic - I used freshly crushed garlic but you could replace it with garlic paste or even garlic powder. It wouldn't make a big difference in this recipe.
- Onion - Finely diced onion adds moisture, texture and flavour to the burgers. You can use brown or red onions.
- Coriander leaves and stalks - There is just as much flavour in the stalks as the leaves so do use them and don't throw them away.
- Ground coriander - Ground coriander goes so well in these burgers. It's a brilliant spice to pair with lamb and also goes well with the tamarind.
- Tamarind bbq sauce - I used the tangy bbq tamarind sauce from Raju Sauces. If you can't get this you could use a teaspoon of tamarind paste instead. Or if you don't want as much tamarind flavour, go for an ordinary bbq sauce.
How to make homemade tamarind lamb burgers

These burgers are very simple to make. Just mix together all the ingredients. Form into burger patties and put in the fridge to rest for at least half an hour.
Then, heat a little oil in a frying pan. Fry the burgers on each side for about 5 minutes.
Serve in burger buns with whatever toppings you prefer. I also drizzled on some extra tamarind bbq sauce!
Can you adapt the recipe?
Yes of course. I made these burgers with lamb as it goes really well with tamarind. However, you could use a different mince. Chicken, turkey or pork would all work really well.
As I've alreaday said, if you can't get hold of the bbq tamarind sauce, use tamarind paste or even a different sauce altogether.
You can miss out the herbs although they add a lovely freshness. Or you could instead add parsley or mint if you prefer.
If you really like hot food, then why not add a diced chilli pepper to the mince when making the burgers. I know it would go brilliantly!
You could also add some extra spices. Cumin and a pinch of cinnamon would be delicious.
Can you make them in advance?
Yes, you can prepare the burgers up to 24 hours in advance. Just store them in the fridge and take them out 30 minutes before cooking them.
Storing and reheating the leftovers
Any leftover tamarind lamb burgers can be stored in the fridge in an airtight container for up to three days. I usually then reheat them in the microwave but you could also reheat them in the oven or air fryer.
Can you cook lamb burgers in the air fryer?
Yes you can. I usually put them on an air fryer liner before cooking them as a lot of fat can come out and it makes the clean up easier. I usually cook them at 195C for 15 minutes, flipping over half way through.
Can you cook the lamb burgers on the bbq?
Yes you can! These tamarind flavoured lamb burgers are a brilliant choice if you're having a bbq!
Recipe
Homemade lamb burgers
Equipment
Ingredients
- 250 g minced lamb
- 1 garlic clove crushed
- ¼ onion finely diced
- 5 g coriander leaves and stalks
- 1 teaspoon ground coriander
- 1 tablespoon tamarind bbq sauce Use 1 teaspoon of tamarind paste as a substitute
- Pinch salt and pepper
Instructions
- Put all the ingredients in a bowl and mix well with your hands.
- Divide into two burger patties and put in the fridge to rest for 30 minutes.
- Heat a little oil in a frying pan and cook the burgers for about 5 minutes on each side.
- Serve the burgers in burger buns with your choice of toppings. I added rocket (arugula), tomato slices, red onion slices, tzatziki and tamarind bbq sauce.
Bbq cooking instruction
- If you're having a bbq you can also cook these on the bbq. The time will depend on the temperature of the bbq so turn them over at least once as they are cooking.
Air fryer cooking instructions
- I found these took longer to cook in the air fryer than in a frying pan. I have tested one out and it took about 15 minutes at 195℃ in an air fryer in a liner. I used the liner to stop the air fryer getting too greasy.

These are really moist juicy burgers with lots of flavour. I've made them a couple of times and love the fresh herbs in them too.
