This easy chipotle lime chicken recipe starts with a simple lime and chipotle marinade that has so much flavour. Perfect if you love spicy chicken dishes that are quick and easy to prepare. Healthy and full of flavour, it's ideal for a simple midweek meal but tasty enough for entertaining too!
You know how much I love spicy chicken dishes and especially easy recipes that are based around a great tasting marinade. Well, this Mexican inspired chipotle chicken is exactly the kind of recipe I love to cook for my family. It's super tasty but also really simple to prepare. There's very little hands on time which means it's great for anyone with a busy lifestyle who still wants to eat healthy homemade and great tasting food.
The recipe is from The Food Bible by Judith Wills. I'm delighted to have received a review copy and I'll tell you more about it further down this post.
What ingredients are in the chipotle lime marinade?
This recipe starts with an easy marinade. There's lime juice and zest for added citrus flavour. Just make sure you buy unwaxed limes!
There's extra virgin olive oil and coriander (cilantro) leaves for extra freshness.
I used smoked chipotle chilli paste which you can buy from most supermarkets as well as a fresh red chilli peppers. If you think it'll be too hot then just omit the fresh chilli pepper.
There's also fresh crushed garlic, agave nectar for a little sweetness, ground coriander seed, salt and pepper.
What can you serve with the Chipotle Lime Chicken?
I served the chicken with cucumber, avocado and watercress salad for a light low carb meal.
However, the children had theirs in a wrap and we have also eaten it with baked potatoes, using the cooking juices as a spicy sauce. It would also be great with rice.
If you really love chipotle then you could even make this chipotle lime mayo to serve on the side!
What can you do with the leftover Chipotle Lime Chicken?
The leftover chipotle chicken keeps well in an airtight container in the fridge for up to 3 days. Here are a few easy recipe ideas for using up the leftover chicken:
- Slice the chicken up and put it in a fajita or quesadilla.
- Put it in a sandwich. It's great with salad and avocado.
- Put it on a pizza.
- Slice it up and put it in a spicy Mexican tomato soup with an extra squeeze of lime!
- Just eat it as it is again but different salad ingredients.
Nutritional Information about this Chipotle Lime Chicken ?
This Mexican chipotle chicken recipe is low in calories and in saturated fat which is definitely healthy. It's also high in protein and low in carbohydrates. For anyone on a special diet it's gluten free and dairy free as well.
Why did I choose to make the Chipotle Lime Chicken Recipe?
There are quite a few healthy recipes in The Food Bible that I knew I would love. However, I knew straightaway that this marinated spicy chicken was a recipe my husband would love as well. My children are also sometimes willing to eat spicy food and marinated spicy chicken is usually a hit with them too!
Whenever I know a recipe is likely to be popular with us all I am way more likely to make it. By the way, we did all love this chipotle chicken, even the children!
Can you adapt this chicken recipe?
You can definitely adapt this chipotle lime chicken recipe. I felt there was quite a lot of marinade and so you could add one or even two extra chicken breasts without changing the quantities of the other ingredients.
As I said earlier, you could omit the fresh chilli pepper for slightly less heat.
I think you could even swap the lime for another citrus fruit such as orange or lemon.
I used agave nectar but the recipe also suggested maple syrup. You could swap it for honey too if you don't have any of these.
The Food Bible by Judith Wills

This section focuses on the nutritional needs at different stages of life, for example different stages of childhood, pregnancy and the menopause.

This chapter answers some of the common questions that people have about weight loss as well as containing a three week programme so you can try to ,retrain yourself'.
Food for Health and Pleasure
This chapter is full of healthy recipes including snacks, starters, light meals, main meals, sides and desserts.
Food at a glance
This chapter is really useful for anyone who wants to check the nutritional value of a food. It shows the nutritional breakdown of over 300 foods making it a really useful reference for anyone trying to keep track of what's in the food they eat.
What did I like best about The Food Bible?
What I really liked about this book is the sensible, balanced and unbiased approach. It doesn't champion any of the diets that advocate restricting a particular food group. Instead, it focuses on what is known based on large 'overview' studies.
It also parallels my own thinking on healthy eating. I don't follow any particular diet but I do want to eat a healthy balanced diet.
What am I going to change about my diet?
There's lots of information in the book that is making me evaluate our family's diet and think about how I could improve it. For example, although we eat fish, we don't eat the recommended two portions of oily fish a week. Maybe I need to include it at lunch times too?
The official UK guidelines say to eat 5 portions of fruit and vegetables a week. However there is lots of research that eating more is even more beneficial. I'm always thinking about how I could encourage my children to eat more healthily, but now more than ever I'm thinking about how I could increase their fruit and veg consumption.
Overall, The Food Bible is a great resource and definitely a book that I know I'll keep dipping into.
Recipe
Chipotle Lime Chicken
Ingredients
- 1 lime juiced and zested
- 1.5 tablespoon extra virgin olive oil
- 1 tbsp coriander leaves roughly chopped (cilantro)
- 1 red chilli pepper diced
- 2 teaspoon smoked chipotle paste
- 2 cloves garlic crushed
- 1 teaspoon agave nectar or maple syrup`
- ½ teaspoon ground coriander
- ¼ teaspoon salt
- Pinch black pepper
- 2 chicken breasts sliced in half
Instructions
- Mix together all the marinade ingredients and then coat the chicken in the marinade. Put in the fridge for at least 2 hours.
- Put the chicken in a single layer in an oven proof dish and bake it in a preheated oven at 190°c for 20 minutes. Baste the chicken with the marinade half-way through.
- Check the chicken is cooked by inserting a fork and seeing if the juices are clear. If not cook for an extra 5 minutes.
